Watermelon Cooler

No school, sleeping late and backyard barbecues. I can’t think of any other food that evokes such positive emotions in me. Well, maybe chocolate cake, but watermelon is a close second.
I recently had the whole family over, and son #1 who is a professional chef, was doing the cooking. I was relegated to prepare dessert and beverages. I knew of course that I had to serve these watermelon coolers. It’s the only way to say, kick off those shoes and don the flip flops, summer’s here! Anyway, I kid you not, this is a most refreshing treat. The cucumber and mint in the drink temper the watermelon’s sweetness, and the lime juice adds just a bit of tartness. The mason jars and pink striped straws just make it so darn cute. And who doesn’t like cute.
Watermelon Cooler
- 4-5 cups of seedless watermelon (1 medium-sized watermelon), cut into chunks
- 1/2 peeled cucumber, cut into chunks
- 5 -10 mint leaves roughly chopped
- 3 tablespoons of sugar
- 1 tablespoon of fresh lime juice
- a pinch of salt
Directions
- Depending on the size of your blender, you may have to do this in two batches, I did. Divide your ingredients in half, and process it twice if need be. Place all the ingredients in a blender, and process until it smooth. Pour the mixture through a strainer into a bowl, pressing the solids with a wooden spoon to get all the liquid out.
- Place the watermelon mixture back in your blender and add ice cubes. Depending on how slushy you want it, add your ice cubes accordingly. I wanted mine very slushy, almost like a snow cone, so I used lots of ice cubes. Serve immediately.
Mama’s Tips: I like to garnish these drinks with a slice of watermelon and a sprig of mint.

yum! My favorite fruit! Watermelon brings me wonderful memories. I’d love to try this. How would this work on a juicer? After juice is done, then add the ice on the blender and the juice? Would it be the same?
I have never worked with a juicer, so I can’t say. It may change the consistency. If you have a blender, I would stick with that.

It’s so refreshing, this also gives me another way of using the mint that’s quickly taking over my veggie beds. Until now I was only using the mint for tea and mojitos, any other suggestions using mint? Thanks

I made a very similar drink for my girlfriends and their husbands this past weekend. I did not use mint, but I think next time I will definitely add some! The watermelon I used was so sweet on its own that I did not need to add any extra sugar. Instead of making it a slushy beverage, I made it an adult beverage by adding some vodka and icing it down in a cocktail shaker. They were a huge hit and everyone was suprised that they were not overly sweet. The cucumber and lime definitely rounded everything out; I can’t wait to add the mint. Beautiful photos!

Very cute and look amazing! I’m hoping to have watermelons be successful in the garden this year- though they will be more of a summer end fruit by then. If they turn out- totally going to make these! And in relation to making it an “adult beverage” per ToddlerMom- I was thinking a bit of Cherry Rum would be a delightful touch!

Wow these pictures are beautiful, looks like it could be in a Martha Stewart magazine! The recipe is very easy too, so I will be trying this out the next time the watermelons look good in the grocery store.

Erin, thanks for your comments. I just go to my local art supply store and purchase art paper or foam core board, or poster board. Sometimes I use fabrics, pieces of wood or even battered cookie sheets make interesting backgrounds.

i love watermelon. i made a shake using watermelon and banana and it’s quite good. i haven’t thought of adding cucumber before. i will try your recipe next time.
